Keeping your skin healthy and nourished is not easy when you’re stuck inside all day. Dry, flaky and inflamed skin is not only a reflection of your body on the outside, but also how you are feeling on the inside too. There is no doubt that mentally, the social isolation we are all going through right now is tough, but all the hand sanitiser and cleaning products aren’t easy on our bodies either.
While a thorough skin routine is essential during this time, so is a healthy and nutritious diet. Choosing foods that are rich in vitamins, anti-oxidants, minerals and amino acids all go a long way to keeping your skin feeling moisturised, fresh and hydrated. As you’ve heard it said before, you are what you eat!
Our Hearty and Delicious Veggie Soup for Healthy Skin
We’ve done the hard work for you, finding some of the best foods for your skin and rolling them all into one simple and tasty soup recipe.
Ingredients:
1 tablespoon olive oil
4-6 Lamb Slow Cook Chops
1 brown onion
2 garlic cloves
1 zucchini
3 celery stalks
1 carrot
500g cauliflower
1 can diced tomatoes
1 litre beef stock
1/4 cup chopped fresh basil leaves
1 cup of dried Barley and Lentils soup mix
Method:
Trim, peel and chop all the veggies.
Heat the oil in a saucepan over medium-high heat.
Cook the lamb, turning occasionally, until browned all over. Then remove the lamb from the saucepan and transfer to a plate.
Add onion and garlic. Cook, stirring, for 3 to 5 minutes until the onion has gone clear.
Add the zucchini, celery carrot and cauliflower. Stir the veggies while cooking for a few minutes or until they start to turn brown.
Add tomato, stock, and 2 cups cold water along with the cooked lamb. Cover and bring to the boil.
Add the barley soup mix and reduce heat to low. Simmer for 30 to 35 minutes until vegetables are tender.
Season with salt and pepper. and stir through some fresh basil.
Serve with a fresh, crusty wholegrain bread..
